Minnie was born on November 18, 1931 in Georgetown, Missouri, the daughter of Richard and Erma Curd. After graduation, she moved to Des Moines and then to Cedar Rapids where she met and married her husband Henry Jackson in 1962. Together they assisted the public and ran the Social Security ADC & Welfare Office for several years. She served on several organizations and boards for the community and received numerous Community Service
Awards. She was also one of the founders of Linn County Daycare. Minnie Worked for the Linn County Extension Service, giving cooking classes, the Jane Boyd Community House and the Ambrose Center. Her work also took her into many homes where she gave nutritional advice.

After retirement, she did volunteer work at the Olivet Neighborhood Mission with the clothing program. Seeing a need in her own community, Minnie opened a clothing ministry first out of her own home and later at the Covenant Seventh Day Adventist Church where she was member. During this time she was encouraged to take up her childhood passion for writing poetry and wrote Little Gems and Jewels. She also wrote a song Take Jesus By the Hand. Minnie had a love for family and her greatest joys were her children and grandchildren whom she helped raise.
